My mama started making these amazing crepes for breakfast when I would come home to visit. A few weeks ago I was having mad cravings for something sweet, but couldn't put my finger on what I wanted. Brownies didn't sound right. Cake? no. Mama's crepes....yep. that's it. I will tell you, when I make something my mom creates it's "a pinch of this" or "a splash of that". As I got better at making these I wrote down my measurements so I can share all this goodness with the rest of you. So let's get started.

The Crepe Mix

(makes about 6-8 full size crepes)


2 eggs

3/4 cups of milk

1/2 cup of water

1 cup of flour

3 tablespoons melted butter

butter for pan

1/2 teaspoon of salt


I use a whisk, but you can also use a blender to make your mix very fine. Mix all the ingredients, and refrigerate for 30 minutes to prevent tearing when cooking the crepes.

Heat a small non stick pan, using butter to coat the bottom of the pan. Crepes won't bubble like pancakes, so you may need to peek at the bottom of the crepe to check if done. FLIP. and set aside to cool.

The Filling


1 block of cream cheese

2 tablespoons of softened butter

3 cups of powdered sugar

2 tablespoons of milk ("a splash")

1 package of strawberries


In a mixing bowl, whisk together all the combined ingredients until you have an icing like substance for your filling.

Cut up the strawberries into small pieces. set aside.

Creating the Crepe

Take your crepe, use a spoon to spread the icing in a line. Place strawberries in the icing, and roll the crepe up. Sprinkle strawberries and powdered sugar to the outside to really wow your guests.
